MIXED GRILLED FRUIT WITH APPLE-CREAM DIP

Lemon Cream Dip:
3/4 cup heavy cream (6 ounces) chilled---Some people this double cream.
1 Tbls nonfat dry milk (no sub)
2 Tbls of Honey
2 Tbls Apple butter
2 Tbls fresh apple juice
1/4 tsp ground cinnamon

In a medium size bowl combine the cream and dry milk. Using an electric mixer , beat until
stiff peaks form, Then fold in the remaining ingredients. Cover and refrigerate until ready to
serve.

For the Fruit:
4 Apples (Golden Delicious type)
4 Firm but ripe Pears ( Bosc if available)
3 or 4 Tbls of unsalted butter
2 tsps of sugar

Melt butter in Microwave the add sugar. Baste prepared fruit with butter mixture and place on
Grill with the cut side down. Turn fruit every 10 minutes until lightly browned and tender but
not mushy when pierced with a fork. Total cooking time about 20 to 30 minutes depending on
the size of the fruit.
To serve--- Place sliced fruit on small serving plate and add cream dip on the side. Serves
about 3 to 4 people
This is easy to prepare and grill fruit is a wonderful experience. Be prepared to make
additional servings.

CINNAMON APPLE SPICE CAKE WITH APPLE TOPPER

1-1/2 cups buttermilk
3/4  cup canola oil
1/2  cup water
2  cups packed brown sugar
2  eggs
2  tsp. baking powder
2 tbsp apple butter
1/2  tsp. salt
2  tsp. vanilla
2-1/2  cups all-purpose flour
2  Gala apples, cored and cut in 1/2-inch chunks

Preheat oven to 350 degrees F. Line two 8x8x2-inch baking pans with parchment paper. Grease and flour the pans; set aside.

In mixing bowl whisk buttermilk, oil, brown sugar, eggs, baking powder, cinnamon, baking soda, salt and vanilla until combined. Whisk in flour; stir in apple. Divide evenly between prepared pans.

Bake 40 minutes or until wooden toothpick inserted near center comes out clean. Cool in pans on wire rack 10 minutes. Invert cake layers from pans onto racks; remove parchment paper. Cool completely on racks.

Prepare Fruit Topper. Place one cake layer, flat side up, on serving platter. Spoon on about two-thirds of topper. Top with second cake layer and remaining mixture. Serve immediately. Makes 10 servings.

Fruit Topper: In skillet melt 2 tablespoons unsalted butter over medium heat. Add 4 small apples, cored and cut in slices and/or wedges; add 1/4 cup granulated sugar. Cook, stirring occasionally, just until fruit begins to soften, about 8 minutes. Stir in 2 Tbls apple butter until hot. Remove from heat.

APPLE BUTTER BARS

2 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup butter or margarine, softened
1 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
1 1/2 cups apple butter
1 cup chopped pecans or walnuts
1 cup raisins
powdered sugar, sifted

In a bowl or other container, mix flour with baking soda, cinnamon, and nutmeg. In a large mixing bowl, cream butter with sugar until light and fluffy. Add eggs and vanilla; beat well. Stir in flour mixture. Add apple butter, pecans and raisins and stir until blended. Pour into a greased and floured 15x10x1-inch jelly roll pan. Bake in preheated 350° oven 25 minutes, or until done. Cool applesauce bars on rack then cut in 2-1/2 x 1-inch bars and sprinkle with sifted powdered sugar.
Makes about 56 applesauce bars.

APPLE BUTTER CHEESECAKE BITES

1 (8-oz.) tub Philadelphia Cheesecake Flavor Cream Cheese
15 Athens Mini Filo Shells
1/4 cup apple butter, divided
15 small slivers of green apple

Spoon cream cheese cheese into filo shells. Top each with about 1/4 tsp. apple butter and a small sliver of green apple.
Makes 15 bite-size desserts.
